Isolation of low-cost chitosan from Trichoderma ressei primarily targeting agricultural applications and development of unique chitosan-based food and beverage preservatives. Isolation of sorbic acid-based food preservatives from cranberries and their by-products and development of unique cranberry-based food and beverage preservatives.
